It’s usually just me (Tanya) and Aslynn who go together.
Anyways, I got the Vegan Shepard’s Pie. It was alright but there was like something in it that was like sour or something, I ate it all because it was still pretty delicious. It came with a salad and I had vegan 1000 island dressing, which is never disappointing :)
Serenah got the Vegan Grilled Ruben with tofu. I had a bite and I think I prefer it made with tempeh. It was extremely delicious regardless.
Aslynn ordered a Cajun style Fish Burrito (she’s not vegan anymore btw, her vegan-ism lasted like 4 days) She said it was REEEAAALLLLYYY good (direct quote)
we all had a Chai Cupcakes and they were divine!!! we didn’t get a pic because we were too excited.

Vegan Quesadillas
smashed black beans, a little bit of taco seasoning (I use Ortega brand, it’s vegan), red onion, garlic, green pepper, and of course, Follow Your Heart Cheddar Cheese :D

Vegan Cheese Pizza
I used a pre-made rice pizza crust, homemade pizza sauce, Daiya Vegan Mozzarella Cheese, and Italian seasoning.
the crust was thin, the sauce was light, and there was so much cheese.
be jealous :)

Vegan Orange “Chicken” with Broccoli and White Rice
I used Gardein Mandarin Orange Crispy Chik’n. I got mine at Whole Foods Market
I ate vegan orange chicken twice before at restaurants, the Gardein version wasn’t as good but I it did come from the freezer so I wan’t actually expecting restaurant quality.
It was very delicious regardless :)
next time, i’d probably add in some sliced onions, snow peas, and baby corn for more flavors

Curried Chickpea CousCous
it’s like a healthy version of the classic “rice & beans”… well maybe it’s not like it but it is delicious
- 1 C chickpeas
- 1 C couscous
- 1 3/4 C water
- curry powder
- boil water
- add all ingredients
- simmer for about 10 minutes on medium heat
Easy peasy lemon squeazy :)

you need:
- 1 small eggplant, peeled and cut into small cubes
- 1 onion diced
- 1 green pepper diced
- a can of stewed tomatoes
what you do: Put everything in an oiled baking dish. Top with vegan cheeseor nutritional yeast if you want. Then bake at 350°F for about 20 minutes.
p.s. I had it on broil for the last 2 minutes of it cooking. I tried out this vegan cheese my mom bought me, I was trying to get it to melt but…. it didn’t work :(

This is and extremely delicious meal and to be honest, I don’t want my sister and her husband to get back from work because I don’t want to share it with them… oh well, I get to eat both of my nephew’s servings because they hate veggies, which is a good thing in this case :D
Vegan Potato Stirfry
- Yukon Potatoes, scalloped
- Onion, sliced
- Garlic, minced
- Red Peppers, sliced
- oil
- Boil scalloped potatoes, let cool completely
- Heat oil in a large skillet and add the potatoes
- Once the potatoes are heated, add onions and peppers and cook for about 5 minutes more.
- Add Garlic.
- Enjoy
- Go back for seconds :)

Vegetable Fried Rice
Serves 4-6 people
- 1 tablespoons cooking oil
- 4 cups cooked day old rice, grains separated
- 1/2 tsp grated ginger
- 1 tsp finely minced garlic
- 1 cup or more minced vegetables (red bell pepper, chives, fresh shitake, extra firm tofu, frozen peas/carrots, cabbage, etc.)
- 2 tablespoons soy sauce
- 1 tsp sesame oil
- Heat the oil, add ginger and onion and cook until fragrant (about 20 seconds)
- Add the rest of the vegetables (I used carrots, peas, green beans, and broccoli. But you can use whatever you like) Add them one at a time, putting in the ones that take longest to cook in first
- Add the rice and the soy sauce, sesame oil, salt and pepper. Fry on high heat until the each rice grain is heated through. Add tofu cubes back in.
